1/2 pound of mixed winter greens (arugula, claytonia, beet greens, frisee, butter lettuce etc.)
1 head of treviso or radicchio
3 clementines segmented with juice squeezed from flesh clinging to rind and membranes in between segments.
1/2 pomegranate seeded
juice of one lemon
extra virgin olive oil
sea salt and freshly ground pepper
Wash and dry lettuces thoroughly. Wash treviso or radicchio and dry. Chop leaves with sharp knife to complement shape and size of other lettuces. Toss in bowl with clementines and pomegranate seeds. Dress with juice of lemon, olive oil, salt and pepper to taste. You may only want to add half of lemon juice.
